L'Évidence

L'Évidence is a fine-dining restaurant in Montbazon where the chef describes his cuisine as created in the moment and guided by instinct. The founder wanted to become a restaurateur from his first day in the kitchen and credits his family, his team and a constant desire to push himself for the restaurant’s creation and daily evolution. The kitchen proposes a culinary journey through Touraine and, at times, other regions dear to the chef, and the house highlights sourcing from local and specialised producers: vegetables in permaculture, local bakers, fishmongers, Valrhona chocolate, Kaviari seafood, truffles and local honey. The dining room presents a refined atmosphere for celebrations and everyday meals, an air-conditioned space described as suitable for casual to formal dress codes and adaptable for events in an elegant setting. The cuisine is creative and modern, market-driven and seasonal, executed with honest, precise technique and a menu philosophy that is carte blanche and moment-led, built around fresh local produce. Gaëtan Evrard serves as the restaurant’s chef. Specialities include a daily-changing Retour du Marché market menu, a chef’s Carte Blanche, a menu dégustation tasting menu, a Valentine’s Day special menu and seasonal dishes that highlight local producers.
