Restaurant Olivia in Denver’s Wash Park neighborhood opened on January 14, 2020. It is the second project from its chef-owner alongside a beverage director and a hospitality lead. The beverage program emphasizes an Italian-focused wine list, expertly crafted playful cocktails, a dedicated wine club and curated wine dinners. The team opens the restaurant each night as if it were their home and the organization maintains an explicit commitment to sustainability and industry improvement, including compost upcycling and partnerships with local producers. Olivia presents special programming such as wine dinners, pasta-making classes and private pasta classes. The dining room is intimate, warm and gracious, described as upscale yet welcoming. A separate wine bar accepts walk-ins on a first-come, first-served basis. Guests and reviewers note an intimate, romantic vibe suitable for special evenings. Specialties include hand-crafted pasta made daily and signature dishes such as Tagliatelle Bolognese, Triangoli Quattro Formaggi, Spaghetti al Limone and Lasagna.
