Temaki Den

Temaki Den is Denver’s premier hand roll and aburi sushi restaurant, founded by chefs Toshi Kizaki and Kenta Kamo. The kitchen applies kodawari — an uncompromising pursuit of perfection — to every component, sourcing nori from the Ariake Sea in Saga Prefecture and using a shari recipe adapted for Denver’s altitude. The menu showcases cylindrical temaki and aburi nigiri alongside an omakase tasting curated by the chefs. Sourcing is global and seasonal, from longtime Japanese suppliers and California fishermen to foraged Colorado matsutake. The restaurant highlights an extensive selection of Japanese whisky and cold sake, including curated flights, positioning Temaki Den as a destination for beverage as well as sushi. Chef Kenta Kamo brings training from Tokyo izakayas and led OTOTO to Westword and 5280 Best Japanese Restaurant honors (2018–2019), while Toshi Kizaki contributes the legacy of Sushi Den (est. 1984) and long-standing supplier relationships. Seating includes a Main Dining Area and sushi bar for traditional chef-led service, a 25-seat cocktail bar called Bar Ikki (walk-in only), and additional lounge/overflow seating used on busy weekend nights. The space supports both formal reservations and casual bar dining with a contemporary sushi-bar vibe. The kitchen focuses on temaki (hand rolls) and aburi (flame-seared) sushi and marries traditional Japanese sushi philosophies with modern techniques and an American sushi-bar sensibility.
