ConTatto Restaurant opened in May 2022 in Frascati, founded by chef Luca Ludovici and maître Lorena Cavana. The kitchen embraces a modern and technical style that remains intimately connected to the local territory through sustainable sourcing and a nearly zero-waste circular approach. Its signature feature is a 170-meter natural underground cave beneath the dining room, maintained at a steady 12 to 15°C with controlled humidity and airflow. This cave serves as a private market, where raw materials are cultivated, aged, and preserved for months in darkness, influencing the evolving seasonal menu with maturation processes unique to the restaurant’s philosophy of “kilometro sottozero.” Chef Luca Ludovici brings extensive experience from kitchens such as those of Gualtiero Marchesi, ALMA, and Michelin-starred Alajmo and Le Gavroche. The dining environment is minimalist and refined, doubling as an art gallery for rotating exhibitions by young Lazio artists, which shift alongside the menu’s evolution. The wine list, curated by Lorena Cavana and Paolo Abballe, features 150 labels highlighting Italy and Lazio, with an emphasis on barrel-aged whites, tannic reds, and sparkling wines that complement the chef’s sauce-focused technique. ConTatto is listed in the Michelin Guide 2025 for its innovative, territory-rooted cuisine.
