Silex

Silex opened on 8 June 2022 in Chahaignes, established by two chefs originally from southern Sarthe. Both chefs bring experience from Michelin‑starred kitchens and from restaurants in Australia, Belgium and New Zealand. The team commits to responsible gastronomy, prioritises traceability and works with regional producers such as La Ferme de l’Hêtre Rousseau (Thoiré‑sur‑Dinan), La Ferme du Gué André / Domaine Matère (Courdemanche) and Les Caprines Fromagères (Marçon). The cooking is audacious yet respectful of culinary traditions, and the restaurant has been awarded a Michelin Bib Gourmand. Silex occupies the village square at 15 Place de l’église, a few steps from the Bercé forest and nearby vineyards. The rural, village‑side setting frames the restaurant within the immediate landscape. The kitchen offers modern, author‑driven cuisine with a strong emphasis on local, seasonal sourcing and on using ingredients in their entirety to respect product and environment. Dishes are creative and technically grounded; the menu is matched with a selected wine list showcasing local and international references and terroir‑driven wines.
