Belvedere is a fine-dining restaurant that combines global flavours with regional ingredients to create modern, unpretentious cuisine under the concept "Baltic Sea meets the world." It focuses on seasonal, 100% organic, locally sourced produce and offers selectable multi-course tasting menus with wine pairings, including an alcohol-free option. The restaurant has received recognitions such as a Falstaff distinction and a Gault & Millau award. The dining room offers a breathtaking Baltic Sea panorama within Strandidyll Heringsdorf. Service emphasises table service with scenic views in an elegant, contemporary setting that reopened after a recent metamorphosis. The kitchen blends contemporary fine-dining technique with regional Baltic ingredients and international influences, producing inventive, sometimes unconventional preparations. Menus change regularly and a philosophy of passion-driven, pleasure-focused cooking shapes the offering. Jan Kruse is Head Chef, young and dynamic, and leads the kitchen team. Specialties include pulpo with beans, artichoke and rosemary; reh (venison) with malt, brioche and fig; kohlrabi with beurre blanc, dill and caviar; pumpkin with olive oil, curry and thyme; Mecklenburger Taube breast and leg; and wolfsbarsch with peas and vin jaune.
