Cassis

Cassis is a neighbourhood restaurant in the heart of Mâcon run by Célie and Aymeric. It offers a modern, season-driven dining experience from lunch to dinner. The owners are passionate about wine and have built an extensive, terroir-driven wine list with a particular emphasis on Burgundy and small French vignerons. The restaurant offers curated wine pairings alongside its tasting menus. Cassis sells gift-boxes and positions itself as a neighbourhood destination for everyday lunches and thoughtful multi-course dinners. The dining room is warm and intimate, with stone walls, soft lighting and a hushed, convivial atmosphere designed for relaxed, attentive meals. The cuisine is modern and seasonal, rooted in local produce and a made-from-scratch philosophy. It honours producers and adapts dishes to the rhythm of the seasons while emphasising responsible sourcing, including responsible fishing and attentive breeders. Chef Aymeric Buiron leads the kitchen. Evening tasting menus are served in four- or seven-course sequences and a weekly seasonal lunch menu anchors daytime service. Wine pairings are offered as three- or five-glass selections. The team bakes 100% natural sourdough bread on site from local organic flours.
