Restaurant Colette is the Michelin-starred dining venue of the 5-star Hotel Sezz Saint-Tropez, named for the writer Colette and set on the shores of the Mediterranean. It presents an elegant modern concept that blurs interior and exterior spaces and combines haute cuisine, sustainable sourcing and a striking seaside setting. Since 2020 Philippe Colinet has led the kitchen and, with his team, has earned a Michelin star in 2021, 2022 and 2023; he places the product at the heart of each dish. Colinet bases his approach on close relationships with local market gardeners, fishermen and breeders and the hotel’s herb garden, and the restaurant offers tasting menus alongside an intimate Chef's Table featuring a multi-sensorial "Lemon Experience." The dining room and terrace are stylish and contemporary, defined by clean lines, natural tones and large windows. The terrace sits amid olive and palm trees and overlooks the hotel swimming pool, creating an intimate, sun-drenched ambience. The Chef's Table is a brushed solid oak design by Christophe Pillet, offering a refined, convivial setting. Cuisine is modern Mediterranean and gastronomic in style, focused on pure, natural flavors and the highest-quality seasonal produce. Dishes are refined and aesthetic, driven by product-led techniques, local sourcing and occasional foraged ingredients. Philippe Colinet is chef.
