Empreinte

Empreinte is a small, family-run restaurant in the historic centre of Vannes, led by the couple Marine and Baptiste. Baptiste trained at Ferrandi and worked in the kitchens of Bras, Le Crillon with Jean‑François Piège, Le Jardin des Sens and L’Oasis before opening his first restaurant with Marine in 2011; the couple relocated to Brittany in 2018 to establish Empreinte. Marine manages front of house and the wine programme, favouring artisan wines from small domaines, principally organic and biodynamic. The house presents a market-driven, living cuisine that emphasises short circuits, biodynamic and locally sourced ingredients from producers and the Vannes market and promotes a responsible, terroir‑driven approach; Empreinte has been recognised by the Michelin guide (selected). The dining room is a simple, warm and enveloping space on Place Valencia in Vannes’ historic centre, described as lively and welcoming with an intimacy appropriate to a small, human‑scale restaurant. The kitchen serves market cuisine focused on fresh, local and seasonal produce, with precise cooking, balanced seasoning and creative yet sincere presentations; the menu changes weekly and highlights coastal catches, vegetables and products from short, responsible supply chains. Baptiste Fournier (Chef) Specialties include weekly market‑driven set menus; coastal catch and seafood dishes served with a saffron‑infused fish broth; magret de canard from the Luguen farm; leek with parsnip cream and hazelnut streusel; and chocolate ganache with Sao Tomé chocolate and fleur de sel.
