La Toq'

La Toq' is a gastronomic restaurant in the heart of Nancy's Old Town offering an inventive, modern approach to French cuisine. The kitchen emphasizes seasonal, carefully selected ingredients and prepares every dish in-house from fresh products; all meats are sourced from France. La Toq' is recognised by the Michelin Guide (selected) for its modern cuisine concept. Dining rooms provide a sober, refined setting in the Vieille Ville of Nancy, comprising a ground-floor room, a second-floor room and a summer terrace with understated, elegant décor and seating suitable for gastronomic meals. The inventive, contemporary cuisine focuses on seasonal produce and refined preparations; menus include a market lunch formula and a tasting-menu concept, and dishes are crafted on-site with attention to tradition and modern technique. Bertrand Heckmann (born Dieuze 1968) trained at the Metz hotel school at sixteen, worked at Le Capucin Gourmand (Gérard Veissière), Lucas Carton (Alain Senderens) and Le Domaine des Crayères (Gérard Boyer), and in 1997 took over La Toque Blanche, reinventing it as La Toq'. Specialities include compression of duck foie gras with apples and quinces; raviole of langoustines with cardamom head jus; sea bass cooked on the skin with leeks and French caviar; polenta-crusted sweetbreads with salsify and citrus; and the Menu Retour du Marché (29€).
