La Vieille Auberge has relocated from one of the oldest streets of Casteljaloux. It presents a seasonal carte and several set menus, from an accessible Market Menu to more elaborate multi-course options. A curated wine list is available for guests and for takeaway, complemented by a dedicated cellar of champagnes and white wines kept at ideal temperatures for immediate service or purchase. The house emphasises quality sourcing of regional products and reworks classic French preparations with contemporary touches, a practice recognised by its selection in the Michelin Guide under “Cuisine moderne.” It provides tailored menus and private-event services for weddings, baptisms, anniversaries and weekend privatisations, enabling bespoke food-and-wine pairings and customised atmospheres. Located in the park of Le Clos Castel, the dining room pairs historic charm with modern elegance to create a peaceful, welcoming and refined atmosphere. Contemporary French gastronomy rooted in terroir works mainly with fresh, local and seasonal products and occasionally incorporates exotic accents in dishes and sauces. Specialties include confit quail fillet with Puy lentil velouté and foie gras; Aubrac sirloin steak gratiné with Viennese butter; roasted royal sea bream with quinoa and miso broth; scallops with grilled pork belly and spiced carrot cream; sweetbreads with Périgord sauce; and thin apple tart with caramel and vanilla ice cream.
