Le Bistrot Gourmand sits in the historic centre of Cuiseaux at the meeting point of Bresse and the Revermont. The site stems from a family tradition that began with a butcher in 1876 and evolved through five generations, and the current restaurant opened in 2014. That lineage informs a deep respect for quality produce and artisanal techniques. Recognised by the Michelin selection, the Bistrot seeks to revive classic regional recipes while proposing approachable menus and maintaining close, long-standing relationships with local suppliers. A modern dining room and a terrace beneath centuries-old arcades occupy the heart of the village, combining a warm, welcoming bistrot atmosphere with contemporary seating and design. The kitchen describes itself as cooks and artisans offering a highly personal, terroir-driven cuisine that marries strong regional accents with modernity and lightness. Everything is prepared on site from fresh, high-quality ingredients, favouring local producers and organic products whenever possible, with an emphasis on seasonal produce and wine pairings from nearby Jura and Beaujolais producers. Specialties include morels (morilles), Bresse poultry with cream, frogs and pond-caught pike, regional cheeses and a curated selection of Jura and Beaujolais wines.
