Le Moulin Fouret

Le Moulin Fouret is a 16th-century former watermill fully renovated into a charme hotel and gastronomic restaurant. The house marries an elegant, bucolic setting with contemporary culinary ambitions, serving refined, creative modern cuisine prepared exclusively from fresh, local and seasonal products. The establishment holds a Michelin Bib Gourmand, mentioned for 2020 and noted since 2022, and operates a second bistronomic project, L'Authentique. It offers on-site hotel rooms and a kitchen rooted in Norman terroir while adopting modern, creative techniques. Set within a one-hectare wooded park on the banks of the Charentonne near Bernay, the property provides terrace and park seating. Guests can relax in shady outdoor spaces and discover the mill’s workings, an apiary and a kitchen garden. The restaurant’s cuisine is modern, refined and creative, built exclusively on fresh, local and seasonal produce. Dishes often feature a refreshing sorbet as a signature accompaniment and include fish, foie gras and lobster preparations alongside regional cheeses and desserts. The kitchen provides take-away/traiteur services and can produce bespoke menus for private events. Chef Cédric Auger was formed by an étoilé chef, spent several years as head chef in Honfleur and is a member of the Toques Normandes. Specialties include homard cuit en 3 façons, foie gras, poisson, cheesecake au chèvre fermier and house sorbets.
