Les Genêts

Les Genêts is a one‑star gastronomic restaurant in Brem‑sur‑Mer, owned and run by Amélie and chef Nicolas Coutand. The house occupies a fully renovated former maison de maître in the Parc des Genêts and presents service in an intimate, restored manor setting. The kitchen offers a bistronomic, market‑driven lunch on weekdays and a gastronomic tasting for dinners, weekends and public holidays, focusing on seasonal sourcing from local producers and a small on‑site garden to supply vegetables and herbs and producing light, fragrant plates that change frequently with concise, flavourful preparations. Chef de cuisine Nicolas Coutand, originally from Vendée, trained at Hôtel Nikko and the restaurant of the Sénat in Paris, worked with Troisgros in Roanne and held positions at the Richelieu (Île de Ré), Castel Marie Louise (La Baule) and Château de Mirambeau before returning to his native region. Specialties include Pressé de chevreuil with smoked bacon, walnuts and red onion marmalade; Confit trout with endives, mango and coriander; Paleron de boeuf braised with sweet‑and‑sour jus and wok vegetables; Saint‑Jacques confited with vanilla, pear and cauliflower; Black truffle (Mélanosporum) with marinated beef and Jerusalem artichokes; Sea fish with smoked leek cream and fish roe; Chocolat‑licorice dessert.
