L'Escarbille

L'Escarbille is a Michelin-recognised restaurant in Meudon, housed in a former train-station buffet and located ten minutes from Paris. The dining concept combines classical gastronomic technique with a modern respect for seasonality, producing precise, generous dishes that put high-quality, market-fresh products first. The kitchen offers both an à la carte menu and a carte blanche menu that change with the seasons, exemplified by Turbot rôti, endives caramélisées and an emulsion à la citronnelle. The house has held one Michelin star for more than ten years. The venue presents a cosy, country-tinged atmosphere with warm, intimate dining rooms, a tiled veranda and terrace tables available in fine weather. The cuisine is market-driven and rooted in classical French gastronomy while remaining current and generous in execution; dishes are precise and seasonal, and the cellar complements the cooking with a broad selection of appellations, including natural and organic wines. Régis Douysset leads the kitchen with his brigade. Owners and hosts Régis and his wife Annette oversee dedicated private salons for business meals and seminars, contributing to the restaurant's convivial yet refined identity.
