L'Intuition d'André

L'Intuition d'André in central Caen is a family-rooted restaurant presented as a family story around patriarch André and offers a blend of modern and traditional cuisine; the menu pays tribute to local memories while the kitchen philosophy emphasizes seasonal plates and sourcing from conscientious artisans and local producers whenever possible. The chef is originally from the Antilles, trained at the hospitality school in Strasbourg, spent two years in New York, worked in Paris and the Antilles, served two years as chef at L'Espérance with Stéphane Carbone and settled in Normandy to open the restaurant. The team lists local partners: producers of vegetables and micropousses, seafood suppliers, bakers, a brewery, a cidery, regional meat suppliers and an Alsace wine domaine. The restaurant encourages multi-generational gatherings and reserves a Sunday service for larger family tables. L'Intuition d'André is SELECTED in the Michelin Guide. The dining room displays Caen stone walls, framed memories on the walls and a décor that mixes modernity and the past to create an intimate atmosphere for a small number of covers (24).
