Magma

Magma is a gastronomic restaurant opened in August 2022 in the heart of Caen. It presents modern cuisine rooted in the Norman terroir and changes its menus with the chef's inspiration and the daily market. It follows a short-circuit, sustainable approach and emphasizes creativity, sharing and the flavours of the region. The dining room was designed by the chef and references his Puy-de-Dôme origins with two lava stones and pouzzolane-colored violet walls. These volcanic elements contrast with a minimalist decor and seating arranged on the ground floor. Contemporary French gastronomy at Magma focuses on seasonal, locally sourced ingredients and bold, creative flavour pairings. It balances classic bourgeois preparations with audacious combinations such as Isigny salmon with rhubarb and turbot with champagne and Isigny cream, and maintains a strong eco-responsible sourcing policy: about 90% of products are sourced within 100 km, many from local producers. Chef Olivier Barbarin trained across France with starred chefs, held one Michelin star from 2010 to 2015, is originally from Auvergne and settled in Normandy. Specialties include Isigny salmon with rhubarb; turbot with champagne and Isigny cream; the 5-course Menu Caldeira (tasting) and the 7-course Menu Magma (tasting) offered in the evening; and Business and Affaire lunch formulas.
