Méditerranéo is the château's gastronomic restaurant dedicated to Mediterranean cooking. It emphasises a terroir-driven approach that celebrates the flavours of the Languedoc and the wider Mediterranean through refined, contemporary plating. Its integration within a working wine estate and curated pairings gives the dining experience a strong sense of place and authenticity. The restaurant has been recognised in national guides, awarded three toques and 15/20 by Gault & Millau and included in the Michelin selection. An intimate dining room in the restored 19th-century Château Capitoul near Narbonne provides a refined, historic setting. The hilltop estate offers terraces and views over vineyards and a Mediterranean lagoon. The atmosphere is elegant and quietly luxurious, suited to special occasions. Contemporary gastronomy blends rustic flavours with elegant technique and focuses on fresh, local, seasonal produce. The kitchen presents structured multi-course tasting menus. Valère Diochet leads the kitchen. Specialties include the five-sequence Menu Expression, the seven-sequence Le Reflet de Valère and a three-sequence Menu Déjeuner.
