Omakase by Walt is a Michelin one-star Japanese sushi bar situated in the center of Ibiza town. Established in 2021 by Walter Sidoravicius, a Venezuelan-born chef with European heritage, the venue features an intimate eight-seat wooden bar where diners witness the preparation of an exclusive Edomae-style tasting menu. Walter's culinary background includes training and living in Japan, notably at Nobu Tokyo, where he embraced a philosophy centered on passion and meticulous craftsmanship. His expertise is highlighted by his finalist position in the 2014 World Sushi Cup and his international experience since 2008, including teaching at the Basque Culinary Centre. The menu presents a refined selection of seasonal ingredients skillfully combined with traditional techniques and Walter's personal touch.
