PAPILLES is a gourmet, modern restaurant in the heart of Poitiers. The kitchen operates with a philosophy of spontaneity and deep respect for nature, sourcing produce mainly via short circuits from the Vienne region (86). The house pairs its tasting experience with a carefully chosen selection of nature-friendly wines. PAPILLES has earned visibility in guides, including the Guide Michelin, and emphasises attentive service, asking guests to declare allergies or dietary restrictions at the time of booking so the tasting can be adapted when possible. The dining room is cosy, warm and uncluttered, its elegant, pared-back design creating an intimate atmosphere; the restaurant accommodates up to 30 guests. The cuisine is contemporary and presented primarily as a tasting experience, with preparations that prioritise seasonal, locally sourced ingredients. Sébastien Boireau leads the kitchen; son and grandson of restaurateurs, he returned to cooking after studies in electrotechnics and business school and brings a family-rooted approach to hospitality and flavour. Specialities include the Menu Gourmand no-choice tasting, the blind Discovery Menu offered in three or five courses, seasonal dishes from local producers in Vienne and nature-friendly wine selections alongside creative, spontaneous preparations.
