Pentole e Provette is a modern cuisine restaurant situated in Fasano, Puglia, Italy, founded in 2016 by Rossella and Luca. Their concept originated in Australia, fueling a return to Italy to invest in local food culture. The restaurant follows an IMPACT ZERO philosophy, committing to zero waste by repurposing typically discarded ingredients and reducing its ecological footprint. The kitchen collaborates closely with small local producers who provide seasonal products from the surrounding lands. The intimate setting fosters a family-like atmosphere sustained by a young and disciplined staff led by sous chef Herjon. The menu emphasizes local vegetables and sustainable proteins, carefully sourced and prepared to honor seasonality and minimize waste. Signature dishes include Grilled King Prawns with Wakame Seaweed and garlic milk foam, Homemade Tagliolino with sea urchin and pea purée, and Donkey Sashimi marinated in brine and herbs with a homemade tartara sauce. Rossella, a biologist with a passion for food and wine, and Luca, with culinary experience spanning Montepulciano and Australia, lead the kitchen’s ongoing development.
