Racine

Racine is a contemporary French restaurant in Nancy. The venue is recognized by the Michelin Guide (Selected). The dining room, conceived by Meuse-based interior architect Chloé Genter, uses raw natural materials—wood, stone and plants—punctuated by atypical colorful details. It sits at 9 rue Stanislas near Place Stanislas. The kitchen presents a short, seasonally changing menu of modern, bistro-style, terroir-driven dishes that privilege local Lorraine products. The chef describes the cooking as "cuisine canaille de terroir." Chef Martin Debuiche trains in Seine-et-Marne and progresses through Jean-Pierre Vigato’s brigade at the starred Apicius; he opens Racine in June 2020, and a collaboration with Alexandre Polmard helps bring the project to life. The team sources products from French farmers, breeders and artisans, maintains close collaborations with regional producers and favors short supply chains and ingredients from reasoned or organic agriculture. The house pairs its seasonal menu with a curated wine list that mixes classics and discoveries the chef finds on his travels, offers an intimate table d'hôte for up to ten guests and highlights a curated wine cellar.
