Romano is a Michelin one-star restaurant situated in Viareggio, Italy, run by Romano Franceschini and his family. It specializes in fish and seafood dishes that reflect the culinary traditions of the Tuscan coastal town. The kitchen emphasizes fresh, locally sourced seafood prepared using refined contemporary techniques. Signature dishes include stuffed small squids with vegetables and crustaceans, lobster vermicelli complemented by spring onion and green tomatoes, and a mixed fried seafood selection featuring crustaceans, fish, and mollusks. The menu balances the natural flavors of seasonal ingredients with inventive culinary skill.
