Scratch Restaurant in Bourg-en-Bresse opened in 2019 by Estelle and Andréas Baehr after years in Brittany and New Zealand. Estelle, an autodidact, curates a living drinks list and looks after service with her team, emphasising attentive hospitality. The house is recognised by the Michelin Guide (Selected), holds a Green Star and features in Gault&Millau (2 toques). The dining room is resolutely modern, neat and warm, a small, carefully styled intimate cocoon of around twenty seats. The restaurant presents surprise tasting menus prepared in view of guests from an open kitchen, with diners choosing the number of courses, offered regularly from Friday evening through Sunday midday. The menu philosophy emphasises local, sustainable sourcing and flavour-driven pairings. Andréas Baehr, chef, brings experience from étoilées kitchens and builds imaginative, creative modern cuisine rooted in local producers and sustainable sourcing. The house works closely with local artisans and producers for vegetables, dairy, bread, fish and meat, highlighting the terroir of Bugey in its food-and-wine pairings. Wine is central: cellar counts more than 280 references, predominantly biodynamic, with careful options by glass and bottle.
