Founded by Mattia Eletto and Elisabetta Sapio, the restaurant embodies their commitment to seasonality, sustainability, and zero-kilometer sourcing, utilizing local vegetables and meats from farms near Gioia del Colle and Mottola. The kitchen highlights artisanal fresh pasta and bread made with native flours, blending traditional handmade techniques with a modern, essential style. Chef Patron Mattia Eletto draws on training from Bologna's Food Genius Academy and experience in Michelin-starred kitchens in Bologna and Paris, alongside expertise in Puglian seafood and land-based ingredients.
