Founded in 2013 on Barbarossaplatz in Cologne by Marcello Caruso, CARUSO Pasta Bar is run by managing directors Marcello Caruso and Emanuele Barbaro. In 2022 the owners refocused the venue on creativity, passion and personality, and the restaurant offers structured set menus (3- and 4-course) plus special events such as a New Year’s 6-course. Service and kitchen staff emphasise competence, passion and warmth. CARUSO is Selected in the Michelin Guide. Located in the historic Dreikönigenviertel on Kasparstraße, the interior is a dedicated pasta bar with long communal tables and intimate dining areas, projecting a warm, creative atmosphere. The cuisine is rooted in Italian tradition with contemporary touches and culinary influences from around the world; it relies on seasonal, carefully sourced ingredients. Dishes span antipasti, regional pasta varieties and Italian desserts presented with modern techniques, and the kitchen cultivates close cooperation with small, chosen wine producers to complement the food. Marcello Caruso is founder. Since opening the team makes fresh pasta by hand from high-quality durum wheat semolina using modern production techniques; specialties include Paccheri with topinambur and Parmigiano, Tajarin with North Sea prawns, Agnolotti del Plin and Cannolo Scomposto (ricotta, pistachio sorbet).
