Jérôme Nutile

A small culinary group in Nîmes comprises a Michelin-starred gastronomic restaurant, the bistro Bistr’AU and the Mas de Boudan hotel. Restaurant Gastronomique opened March 2015 and secured its first Michelin star with its team in 2016. Beyond à la carte, the venue operates a bistro for relaxed, market-driven dishes and offers hotel rooms plus a privatizable room for private and professional events. The house pursues sustainable practices recognised through GreenFood initiatives. Set in a restored mas where stone features, the dining room is modern, luminous and convivial; a central cheese‑aging cellar and a tower wine cellar contribute to the restaurant’s identity and an intimate, refined atmosphere. The kitchen serves a contemporary, 'haute couture' style of French gastronomy focused on seasonal produce, refined techniques and close sourcing from local growers and fishermen. Jérôme Nutile leads the group and was awarded Meilleur Ouvrier de France in 2011. Specialities include seasonal haute‑couture tasting menus, fresh Mediterranean seafood from Grau‑du‑Roi, microgreens supplied by Alma Farms, edible flowers and herbs from local producers, and produce from the restaurant’s dedicated 4,000 m² garden in Ners.
