Les Flots

Les Flots is a gastronomic restaurant in La Rochelle beside the Tour de la Chaîne in an 18th‑century estaminet. The kitchen centres fish and seafood in seasonal menus with a gourmand, modern approach and rigorous selection of sea products from engaged producers; its wine list won the Restaurants Gastronomiques prize for best wine list in France, and the house—open since 1945—offers à la carte and tasting menus, seasonal events and takeaway boxed meals. Housed in a historic Vieux‑Port building, the dining room faces the old harbour and offers an elegant maritime setting with an expansive view; service is dynamic and attentive and the site underscores a blend of history and contemporary presentation. The cuisine is modern French gastronomy focused on seafood and seasonal produce, with precise, creative preparations that highlight the natural taste of selected marine and local ingredients and are accompanied by considered wine pairings. Grégory Coutanceau is the chef; he trained with Ducasse and Lenôtre, relaunched the house in 1997 and combines modernity and tradition while championing local producers and terroirs. Specialties include Noix de coquilles Saint‑Jacques; Turbot en kadaïf crousti‑moelleux; Roast lobster with cauliflower mousseline and Aquitaine caviar; Ris de veau and langoustine; House caviar "Vintage" with langoustines; and Foie gras mi‑cuit (Mr Morille).
