Restaurant Olivia in Denver’s Wash Park neighborhood opened on January 14, 2020. It is the second project from its chef-owner alongside a beverage director and a hospitality lead. The beverage program emphasizes an Italian-focused wine list, expertly crafted playful cocktails, a dedicated wine club and curated wine dinners. The team opens the restaurant each night as if it were their home and the organization maintains an explicit commitment to sustainability and industry improvement, including compost upcycling and partnerships with local producers. Olivia presents special programming such as wine dinners, pasta-making classes and private pasta classes.
