Juan Camilo Liscano is founder and chef; he traveled the world seeking stimulating flavors and built a career at World’s 50 Best and Michelin-starred restaurants in the United States and Europe before returning to his hometown of Miami. Specialties include Pets de Nonne (smoked trout rillette, trout roe), Retired Dairy Cow Tartare, Brown Butter Poached Turbot, Iberico Pork Collar, Hokkaido Scallop and Pistachio Sticky Toffee Pudding.
