Restaurant Saisons

The Saisons restaurant is located in the Château du Parc du Vivier in Écully, west of Lyon. This historic château, built in 1882 by the famous Cottin family, offers an elegant and refined setting that embodies French tradition and sophistication. The restaurant opened its doors in the early 1990s, alongside the Paul Bocuse Institute, now known as the Institut Lyfe, and has since cultivated a passion for the art of French living. The Michelin-starred cuisine, led by Executive Chef Florian Pansin and Head Chef Christian Née, Meilleur Ouvrier de France 2004, offers a culinary journey that combines history and modernity through seasonal French gastronomy. Guests can enjoy tasting menus for lunch and dinner, as well as a refined à la carte selection in the evening, including a choice of cheeses carefully selected by affineurs and exquisite pastries created by dedicated professionals. Saisons is part of the Relais & Châteaux collection and welcomes guests from Monday to Friday for lunch and dinner. The restaurant also hosts special events, such as jazz dinner evenings and collaborative dinners with distinguished chefs like MOF 2023 Jérôme Schilling. The dining room is managed by Sébastien Candusso, ensuring a high-end gastronomic experience in a formal yet welcoming atmosphere.
