Restaurante Tosca, founded in 2006 in Jávea, holds a prominent place in the Costa Blanca gastronomic scene. Since May 2019, chefs Ferrán Ayora and Julien Buyle guide the kitchen with a focus on seasonal tasting menus featuring locally sourced ingredients from small producers. The cuisine merges Franco-Belgian traditions with Mediterranean influences, crafting inventive dishes such as roasted sea bass with wild fennel and salt-crusted Chateaubriand. The restaurant offers three tasting menus that reflect seasonal changes and market availability, complemented by a sommelier-curated wine pairing showcasing national and international selections.
