ITO in Cologne presents traditional Japanese cuisine with modern touches and European influence, stressing clear lines so product, texture and flavour can unfold and a strict focus on top-quality ingredients and refined, handcrafted technique. Recognised in the Michelin Guide as "SELECTED", the restaurant pairs purist presentation with occasional surprising refinements in its omakase and à la carte offerings. In the heart of the Belgisches Viertel, an open sushi counter and a product-focused dining room showcase the chef’s craft and encourage direct counter interaction. The cooking blends traditional Japanese technique, modern interpretation and European influence, concentrating on purity of product, clear composition and careful textural and flavour balance; menus feature omakase tastings, sushi, sashimi, tempura and seasonal fish and meat dishes. Kengo Nishimi (Chef) grew up in Fukuoka on Kyushu, trained in local sushi restaurants and across kitchens in Japan, Canada, Australia and New Zealand before moving to Germany in 2013; he worked in Düsseldorf under Yoshizumi Nagaya and later developed ITO’s concept with Torben Schuster, opening ITO with his wife Michi. Specialties include 5- and 6-course omakase, tempura (seafood and vegetable), nigiri and sashimi variations, Blue Fin (Balfego) tuna, Japanese Wagyu A5 and Black Cod Saikyo Miso; the team receives Balfego Blue Fin and additional seafood from Marcos Japan Food and Seefisch & Meer multiple times per week.
