Rolfs Kök is a Stockholm restaurant run front of house by restaurateur Johan Jureskog, formerly a member of the Swedish national chef team, together with part-owner and restaurant manager Klas Ljungquist. Jureskog and Ljungquist have jointly owned Rolfs Kök since 2003. The restaurant is recognised by the Michelin Guide (SELECTED) for its traditional cuisine approach. The restaurant was founded in 1989 on an open-kitchen concept initiated by Rolf Nilsson. The dining room features an open kitchen visible from the bar so guests can follow the cooks at work. The interior, created with input from architects Jonas Bohlin and Thomas Sandell, is described as spare, original, traditional, inventive and thoughtfully designed. Cooking is rooted in traditional, seasonal cuisine with an emphasis on plainness and quality; dishes are served without flourish. The menu aims to show the season’s flavours clearly. Magnus Johansson is the head chef. Specialties include seasonal traditional dishes, open-kitchen preparations and carefully sourced local ingredients that the kitchen obtains by working as closely as possible with nearby producers. The cellar supports wine pairings from an 800+ bottle list with suggestions prepared to accompany each dish, and the restaurant stages recurring pea soup and pancakes events.
