Papageno reopens July 2025 at Untere Laube in an 11th‑century building that retains parts of the old city wall. Fully renovated in 2025, it pairs modern design with historic fabric. The team emphasizes seasonal produce and a curated wine programme under sommelier Pascal Roth, anchored by an unusually large, regionally focused cellar and recognitions from Guide Michelin, Gault & Millau and Chaîne des Rôtisseurs. Interiors are cosy and high‑quality, with Papageno references — feather tiles, animal and plant motifs, vertical struts and rounded arches — and divide into a foyer with lounge; a main room for 25–30 with a small gallery; a vaulted room; and a quiet summer courtyard. The kitchen offers elevated Central European cuisine with Mediterranean and French influence, reinterpreting classical dishes with precise contemporary detail; offerings include gourmet tasting menus (vegetarian variant), à la carte classics, weekly lunch menus and a midweek surprise menu. Patrick Stier trained from 2005 and worked in Austria and Switzerland before moving to Konstanz in 2009; he is head chef, took over Papageno in 2019 and since 2025 develops it with business partner Benjamin Etter into a Lake Constance gourmet hotspot. Specialties include Seezunge with saffron foam and morels; Kalbsfilet & Bries Rossini‑style; Jakobsmuschel with fennel, grapefruit and caviar; Royal‑Taube with giblet sauce and Bramata polenta; and a 6‑course Gourmet Menu with vegetarian option.
